2 cups sliced cucumbers (English or pickling cucumbers work well)
1/2 small red onion thinly sliced
1 medium carrot julienned
1/2- 3/4 cup My Thai Vinaigrette*
Place all the vegtables in a pickling jar or other glass container
Pour Thai Vinaigrette over vegetables
The longer the veggies marinade in vinegar the spicier then become
* To make the My thai Vinaigrette from the My thai Gourmet Sauce add 3 T of the sauce to 1 cup of seasoned rice vinegar.
