Delightful, Healthy Thai Noodle Salad

Thai Peanut Noodle Salad

INGREDIENTS:

1/2 cup peanut butter

1/4 cup River Wave Foods Thai Vinaigrette

1/3 cup hot water

1-2 T oil (peanut with a dash of sesame oil is great)

8 oz cooked rice noodles (other noodles work well too)

1 cup cleaned dried bean spouts

½ cup julienne carrots

1/4 cup thinly slice green onions

1 cup shredded red cabbage

Fresh cilantro, wedges of lime and crushed roasted unsalted peanuts

TO DO:

  • Whisk together peanut butter, hot water and My Thai Vinaigrette

  • Heat oil in a wok or large pot medium/high heat

  • Add noodles to oil and quickly stir fry, turn heat down

  • Add sprouts, carrots, onions and cabbage and toss with noodles

  • Turn heat off and add peanut sauce, toss thoroughly

  • Garnish with cilantro, lime and peanuts
