Grilled Lamb Chops with Chimichurri Sauce

6 to 8 lamb chops

4 T Chimichurri Sauce

salt and pepper to taste


Preheat a cast iron grill over high heat

Season chops with salt and pepper

Place chops in pan and sear for 2 minutes each side

Reduce heat to medium and cook another 3-4 minutes depending on thinkness of the chop)

Remove from heat and allow to sit 5 minutes before serving

Place a dollop of chimichurri on each chop and serve
